Cold Storage Refrigeration

Protective storage of foods in a refrigerated place is generally known as cold storage refrigeration. Cold stores and refrigerators need continuous monitoring. The temperature control varies both with the type of food and the number of different foods being stored. Freezing foods extends storage life by slowing the physical change and chemical and microbiological activity which causes deterioration of the foods. Over cooling reduces the efficiency of the freezer and may result in a raise in temperature which may damage the quality of the product.

  • Critical storage conditions – in this system pre cooling requirements differ based on the method and produce of cooling such as room cool, hydro cool, forced air cooling, evaporated forced air cooling and ice packaging.
  • Commodity storage conditions – this system of cold storage is for designing a storage in which a product storage condition must be defined in terms of critical storage condition of temperature, relative humidity, presence of carbon-di-oxide, light, etc.
