Protective storage of foods in a refrigerated place is generally known as cold storage refrigeration. Cold stores and refrigerators need continuous monitoring. The temperature control varies both with the type of food and the number of different foods being stored. Freezing foods extends storage life by slowing the physical change and chemical and microbiological activity which causes deterioration of the foods. Over cooling reduces the efficiency of the freezer and may result in a raise in temperature which may damage the quality of the product.
Categories of cold storage:
- Cold storages of fresh horizontal products do not require pre cooling
- Multi commodity cold storages for short term and long term storage of fresh horizontal products which require pre cooling and varying storage requirements
- Controls atmosphere storages
